“We would like to invite you to taste the flavours of yesteryear and have therefore chosen the most distinctive and famous dishes. Start by whetting your appetite with a starter of bresaola, salted and dried beef (or venison), preferably eaten as it is. You can enjoy it with a plate of sciatt, round buckwheat pancakes filled with cheese, or taròz, a type of mashed potatoes, green beans, cheese and butter.
Next up are the legendary pizzoccheri, buckwheat noodles served with cheese, potatoes, Savoy cabbage and lots of butter; alternatively, the manfrigole, buckwheat crepes filled with cheese and bresaola, are also worth a try.

As a second course, polenta taragna made with black flour, butter and cheese accompanied by deer and game salmì, with porcini mushrooms as a side dish. Before the dessert, a small piece of cheese, Casera, Scimudin, or the king of Valtellina cheese products, the renowned Bitto.
For dessert, a slice of bisciöla, rustic panettone with walnuts, figs and raisins. All accompanied by wines from Valtellina (Sassella, Grumello, Inferno and Sfursat, to name the most popular). And, after the caffè del pignattino , it is time for a toast with a grappa or a local bitter, Braulio, Taneda or Genepì.
